THE IBERIAN SERIES
Redbreast’s Iberian Series celebrates Gilbey’s
sherry history - of importing fortified wines since the late 1800s - with a series of releases from across the Iberian peninsula. Master Blender David McCabe has travelled to source casks from sun-drenched Spanish bodegas and Portuguese quintas to expand Redbreast’s sherried flavors.
Â
THE WHISKEY
The fifth iteration in our famed series uses Moscatel wine casks from the hills of Málaga, Spain, to finish our signature Single Pot Still Irish Whiskey style. Partnering with Bodegas Quitapenas, family-owned since 1880, to procure Spanish Moscatel casks known for their floral aromas accompanied with pineapple, peach and notes of honey. The wine is aged in American Oak for 24 months before the casks are emptied and transferred to Mildeton Distillery for ageing. Here, Redbreast’s Single Pot Still Irish Whiskey has been maturing in these casks since 2024.
Â
TASTING NOTE
NOSE: A fresh and floral balance of zesty fruits with dustings of nutmeg and rich vanilla oak.
TASTE: Vibrant fruits combined with textured layers of toffee and honeycomb, subtle undertones of dried herbs, all while the oak remains consistent.
FINISH: Pot still spices and wine seasoned oak lingering until the very end.
